Join Jenny from the Nourished Kitchen and learn how to prepare traditional foods while having the time of your life in the Old World! This exciting Culinary Getaway features hands-on cooking classes where you’ll learn how to prepare real foods at home. Jenny will teach you how to ferment vegetables, explain why you should be soaking, souring or sprouting your grains and show you how to enjoy great wholesome meals without waste.

Check-in starting at 4pm

You may arrive as early as noon, but your room will not be available until 4pm. Feel free to enjoy a salad or sandwich after your flight, go for a walk and take in the beautiful scenery around you or relax by the pool.

Dinner will be at 7:30pm

Served and prepared by our hometown chef and made with typical foods from the Lucchese cuisine. Guests will have the opportunity to get to know each other while sharing a relaxing evening together.

Cooking Class 10am to 1pm
“Exploring Seasonal Vegetables”

Join Jenny as she showcases traditional methods for preparing seasonal vegetables with special emphasis on fermentation and pickling. Explore classic flavor pairings for fresh vegetables and herbs, easy cooking methods, and simple, no-fail techniques that you can use to prepare extraordinarily flavorful dishes using seasonal vegetables from your garden or farmers market at home. Lunch to follow.

Free Time for the rest of the day, a great time to enjoy a visit to Lucca. Rent a bike and ride around the ancient wall, have an early dinner, and enjoy some Italian gelato in Piazza San Michele.

A Day at the Farm from 9am to 5pm

We will leave in the morning on a chartered bus for a two-hour journey through the rolling Tuscan hills to Jovial’s largest organic einkorn farm. We’ll enjoy a light lunch with Leornardo and take a tour of the einkorn fields. Drive your rental car if you’d like and enjoy an evening in Siena.

Cooking Class from 10am to 1pm

“Soaked, Soured and Sprouted.” Jenny shows you how to prepare whole grains like Einkorn for optimal nutrition through the traditional methods of soaking, souring or sprouting. Includes lunch of wood-fired sourdough pizza and salads of seasonal greens, vegetables, fruit and local charcuterie.

Free Time All Day

Free time all day! Choose to stay at the villa and relax by the pool after a leisurely breakfast. Give Jenny a hand prepping for tomorrow’s class. Visit a local spa, or travel to your choice of great Tuscan destinations like Florence, Siena, Cinque Terra, Barga, and Garfagnana.

Cooking Class from 9am to 12pm
“The Whole Animal.”

Learn traditional techniques for rendering fat and preparing broths with an emphasis on easy-to-prepare pates, terrines and other dishes. Jenny gives simple tips that will help you to incorporate these nutrient-dense foods into your cooking in unique, delicious ways. Lunch to follow.

Prepare Dinner with Jenny

Join Jenny for your final cooking class where you will help prepare a lovely farewell dinner of local, seasonal and traditionally prepared foods including the ferments prepared earlier in the week.
